Pineapple Smash

BRAND NEW Alcohol-free Cocktail: Pineapple Smash

🍸Time for a brand new alcohol-free cocktail, aka Bubblypoptail, in Marbs!

I found an already prepared pineapple at the store today so I thought why not make a cocktail with that🍍 

INGREDIENTS

For 2 cocktails you’ll need:

– A grill pan or outside grill
– Muddler
– 100ml of Lyre´s White Cane Spirit (this is an alcohol-free spirit based on white rum – 0.0%ABV)
– 100ml of (fresh) pineapple juice 
– 200ml of Ginger beer
– 8 slices of pineapple
– 1 lime
– 2 tablespoons of brown sugar
– Agave syrup 

If you grill the pineapple and lime, it brings another depth of flavour, enhancing the sweetness of the fruit. And if you use the outside grill, also a little smokiness. Today however I opted for using a grill pan…

RECIPE

Then now the recipe…

  1. Slice the lime in half and dip into the brown sugar
  2. Then heat up a lightly oiled grill pan (I used sunflower oil so not to add an oily flavour to the fruit) and grill the pineapple on medium heat for 2 or 3 minutes each side, leaving the limes flesh side down
  3. Once the pineapple is cooked take the pan off to cool. 
  4. Once cooled, put the pineapple in a shaker (leaving out one slice for garnish), squeeze the limes into the shaker, add a good squeeze of the agave syrup and muddle the pineapple for a few minutes
  5. Add the pineapple juice and give it another quick muddle
  6. Split the muddled mixture between 2 glasses and add 50ml of Lyres to each glass
  7. Stir together and fill the glasses with ice then top off with Ginger Beer
  8. Garnish each glass with half a slice of pineapple and serve

As an alternative, you could add the ice and the Lyres to the muddled mixture in the shaker. Then shake, shake, shake and strain into Martini glasses. Add a dash of Ginger Beer & serve with a slice of the leftover grilled pineapple. NJOY!

RESULT

The result is a drink with a tropical taste due to the pineapple. It also has a deep flavour of the White Cane Spirit from Lyre´s – It worked out to be quite delish if I might say so😆
